Umbria's cooking traditions stem from a set of simple natural ingredients cooked with special care following traditional methods. Discover the taste of our typical dishes, simple and wholesome, yet full of surprises. Oil, wines, truffle, delicious cold meats and cheese are the pillars of our cooking traditions.
Each town has its own typical dish and a specific way of cooking it. In this section, we would like to give you a brief overview of Umbria's main products, to spur your interest and encourage a unique tasting experience throughout our region.
For cheese lovers, Umbria is a real paradise. In our region, we produce a wide range of different cheeses, from the classical ones, such as caciotta, pecorino, ravaggiolo, ricotta, to the flavoured ones (with truffle, chillies, olives, aromatic herbs, and onion).

However, the most typical products in Umbria come from the famous pork butchering tradition: capocollo, "coglioni di mulo", coppa di testa, corallina or Umbrian salame, guanciale or barbozzo, lombetto, mazzafegati, porchetta, and prosciutto.
Not to mention the notorious Prosciutto di Norcia, the most famous product from Umbria, EU-certified since 1997.
For those who love fish, you cannot miss the superb blue fish from the Trasimeno lake: eels, carps, Caspian-sand smelts, pikes, perches, and tenches.

The cooking traditions are well rooted in the products of the earth: lake broccoli, grass-peas, Cannara's onion, lake French beans, pit beans, lentils, spelt, red potatoes from Colfiorito, and black celery from Trevi. There are a million ways and recipes to enjoy all these products, ranging from sweet to savoury dishes, from first courses to desserts. Here is a list of the most famous dishes you can taste: attorta, bringoli, brustengolo, castagnole, ciaramicola, ciriole, cresciole di ciccioli, crescionda, fave dei morti, and mostaccioli.
